Dionysios Lavrangas, “Introduction and Fugue on Two Greek Themes”.

Born in Kefalonia, Greece, Dionysios Lavrangas (1860-1941) is one of the most notable representatives of the classical Ionian School of Music. Lavrangas is one of the first composers of his generation who incorporated within their works elements of the Greek traditional music.

Salt-cured cod and garlic spread (skordalia) are a “must” in the traditional festive menu for the Greek Independence Day, which is celebrated every year on March 25. So, let us honour this special occasion by twisting a little bit the original recipes. If you do not like skordalia, just skip it! You can finely mince a clove of garlic, spread it over your beetroots, and drizzle them with some wine vinegar and olive oil to kick their taste up a notch. As to the fish, frying or deep-frying is optional. Ovens do a lovely job too!
