To accompany my pork roulade, I chose Frederick Delius (1862–1934) and his “Winter Night,” the second of "Three Small Tone Poems". This tender musical sleigh ride moves through crisp air and glowing horizons, where gentle strings and playful bells evoke both warmth and frost. Its shimmering calm reflects the depth of dried fruits and chestnuts, creating a quietly festive pairing that lingers like winter light — a moment of seasonal stillness to savour together and remember.

New Year’s Eve magic on a plate! Pork roulade stuffed with dried fruits and chestnuts, slow-roasted for three hours until the meat melts in your mouth. I tucked it into a baking tray with potatoes, sweet potatoes, dried prunes and apricots, plus cubes of celery root. A drizzle of olive oil, fresh thyme, rosemary, and oregano brought everything together. Winter flavours, deep comfort — and the perfect start to the new year.
