Home-made kumquat spoon sweet, prepared from garden fruits filled with almonds from a dear friend’s tree. Unrefined cane sugar, filtered water and freshly squeezed lemon juice form a clear, delicate syrup. Each kumquat is patiently de-bittered three times, then slowly simmered and left to rest overnight. Kumquats were introduced to Corfu by the British botanist Sidney Merlin (1871–1952). The result: jewel-bright fruit — spring in a spoonful.
