Just as humble ingredients become extraordinary through care and balance, every note celebrates the beauty of heritage, nature, and quiet artistry.

Inspired by my Cretan grandmother's summer kitchen, this humble dish celebrates the beauty of seasonal ingredients. Fresh amaranth greens and fragrant extra virgin olive oil come from a friend gardener's harvest in Marathon, joined by organic onion, garlic, ripe tomato, and a spoonful of tomato paste, slowly simmered into a rich, aromatic sauce. Black pepper, chili pepper, and sweet paprika add gentle warmth, while fleur de sel from Mani enhances every bite. Tender and silky, the greens reveal their delicate lemony notes, creating a simple yet expressive melody of Mediterranean flavours — proof that, like music, the finest gastronomy begins with harmony and heartfelt tradition.
