Lou Harrison (1917-2003) was described by prominent authors of his time as a “great, timeless and universal” American composer. He was a multifaceted artist: painter, music critic and theorist, musical instruments creator. He is considered as the founder of the American gamelan and world music movement, and through his gamelan works he completed his goal of uniting East and West. His “Homage to Pacifica” (1991) was written for voice, narrator, choir, and Javanese gamelan.

Tropical dragon fruits (aka pitayas) originally came from the Pacific Coast of Central America and Indonesia. Their name derives from the leather-like skin and scaly spikes on the fruit exterior. Astonishing fact: they are also produced in the island of Naxos, Greece! Did you know that? Well, that was a new one for me! And a perfect opportunity to make a mousse-like dessert! Fluffy vanilla cream laying on a ruby red bed of forest fruit sirup (home-made); topped with unprocessed dragon fruit spheres and fresh pomegranate seeds.
