Youvarlakia – A Glimmering Jewel in the Crown of Greek Cuisine!
The origins of youvarlakia trace their roots to the broader Eastern Mediterranean, where the dish has been cherished for centuries. My take on this classic features organic rice and high-quality bio beef mince, combined with fresh vegetables and aromatic herbs, all sourced from local farmers and producers. It is finished with a velvety egg-lemon sauce, which ties together the rich flavours perfectly.
This recipe is inspired by a timeless version from the 1969 edition of the “Cooking and Pâtisserie Guide” by Nikolaos Tselementes, the “Greek Escoffier,” one of the most influential chefs and cookbook authors in 20th-century Greece.

Music Pairing
Sokratis Sinopoulos Quartet, “Eight Winds”.
 			Music Bites
“Eight Winds” — born of the delicate interplay between traditions and modern sensibility — is a sweet, nostalgic piece suffused with subtlety. In this ballad, you feel a breeze from the Bosphorus carrying the delicate, weeping voice of Sokratis Sinopoulos's (born in 1974) Constantinople lyra. Around it, sensitive piano and bass weave gentle harmonies, while discreet drum touches lend a quiet pulse.
