Melitzanopita

salty, summer, eat, autumn, season, greek, music

Food Notes

A deliciously rich melitzanopita, inspired by a traditional Tyrnavos recipe. Crisp filo layers cradle silky black and white aubergines, leek, spring onions, onion, parsley, milk and eggs.

Wheat trahanas, feta and kefalograviera add depth and texture. Generous extra virgin olive oil brings everything together in this deeply savoury Greek aubergine pie.

My sincere thanks to chef Sotiris Evangelou for sharing his fantastic recipe with us.

Music Pairing

Stelios Kerasidis, “Gianni mou, to mantili sou”.

Music Bites

This folk song associated with Epirus is revisited here in an instrumental arrangement by pianist and composer Stelios Kerasidis (b. 2012). Its lyrical phrasing and delicate piano textures make a natural pairing for this recipe from Tyrnavos, bringing together the warmth of Greek tradition with a contemporary classical sensibility. A meeting of melody and flavour, where the music echoes the dish’s sense of place and heritage.
