Fava Santorinis, which is also known as yellow split peas, lathouri or Spanish vetchling, is a unique Greek produce (PDO), grown in the island’s volcanic soil under the light of the bright sun of the Aegean Sea. To enhance its earthy flavour, drizzle with extra virgin olive oil and fresh lemon juice. Ideally combined with capers, sea fennel and smoked white tuna from the island of Alonnisos.

The cosmopolitan Greek composer Dimitry Levidis (1886-1951) spent his life in Athens, Lausanne, Munich, and Paris. Influenced by various styles of his time, he experimented with bizarre instruments used in the first half of the 20th century. His quite original personal style takes distances from that of the Greek National School. Composed in 1908, his First Greek Romantic Sonata won the Franz Liszt Prize.
