Crispy Roasted “Giant” Beans and Chickpeas

The film was shot in Florina, a town situated near the Prespes Lakes, an area that has always been one of Angelopoulos’s favourite film shooting locations.

Craving for some healthy snack? Why not trying some crispy roasted Greek “giant” beans and chickpeas? The area around the Prespes Lakes produces excellent quality legumes. Some varieties are cultivated with traditional methods, sustainably farmed, and certified as a PDO (Protected Designation of Origin) and PGI (Protected Geographical Indication) products. Just boil your giant beans and chickpeas, dry them, and toss them in flour with salt, paprika and cumin. Then, pan fry them (or bake them in the oven) until golden crisp on the outside.
