Carob Flat Bread Sandwich

Nikos Skalkottas, “36 Greek Dances”, Series II, IV. Nissiotikos “A Woman from Mylopotamos”.

This piece by Nikos Skalkottas (1904-1944) is based on a melody from the Cretan vocal tradition of “rizitiko” songs. Skalkottas could masterly transform popular tunes into classical compositions. He is considered as one of the most influential and prolific Greek composers of the 20th century, although his musical language was not understood by his contemporaries. He was also a virtuoso violinist.

Snack time! Sandwich with home-made carob flat bread. I combined it with apaki (marinated cured pork meet from Crete), flakes of two different types of graviera cheese – a smoked one from Ancient Epidaurus, and spicy one with pepper seeds from Corinth –, fresh chives and mint, and extra virgin olive oil. Simply delicious and deliciously simple! Enjoy!
