Aubergine Salad

“In the Rose Bush/Apanou stin triandaphyllia”.

A small musical tribute to Elder Epiphanios, honouring his life in Halkidiki, where he spent most of his years as a monk. The homage features a traditional song and the mandilatos dance of the region. The song, “Aspro poulaki kathetai apanou stin triandaphyllia” (“A White Bird Perching in the Rose Bush”), originates from Halkidiki and evokes the local musical heritage that Elder Epiphanios cherished throughout his life, connecting faith, culture, and tradition.

Elder Epiphanios of Mylopotamos left us a rich legacy of traditional Mount Athos recipes from the holy mountain of Halkidiki, including his wonderfully flavourful aubergine salad. Chopped walnuts, diced red, yellow, green, and orange bell peppers are placed over cooked (or fire-roasted) aubergine as a garnish and drizzled with an extra virgin olive oil–vinegar dressing. The guests then mix the ingredients together on their plates.
