Fava Santorinis, which is also known as yellow split peas, lathouri or Spanish vetchling, is a unique Greek produce (PDO), grown in the island’s volcanic soil under the light of the bright sun of the Aegean Sea. To enhance its earthy flavour, drizzle with extra virgin olive oil and fresh lemon juice. Ideally combined with capers, sea fennel and smoked white tuna from the island of Alonnisos.

Influenced by various styles of his time, he experimented with bizarre instruments used in the first half of the 20th century.
