Iconic figure of the contemporary Greek music and culture, Mikis Theodorakis (1925-2021) was a multi-awarded prolific composer. He wrote more than 1,000 works. An astonishingly large number of classical scores and extremely popular songs loved by audiences of different generations not only in Greece but also all over the world. He composed the ballet suite “Carnaval” between 1947 and 1953. Theodorakis’s score was performed for the first time by the Opera di Roma Symphonic Orchestra in 1953. The ballet was choreographed by Rallou Manou.

Time to prepare some dishes with cheese for the last Sunday of the Greek Carnival (Apokria)! It is called “Tyrini” or Cheesefare Sunday, thus the choice of ketes or kete, a simple bread-like dough from Cappadocia with feta cheese filling or no filling at all.
