Academy and Grammy Award-winning composer and conductor Tan Dun is one of the leading figures of classical contemporary music. His influences are both Western and Chinese. His oeuvre includes operas, orchestral, vocal, chamber, solo and film scores. He has won an Academy Award for his film score in “Crouching Tiger, Hidden Dragon” (2000). He has also written the music for “Hero”, a 2002 martial arts epic that was nominated for an Academy Award for Best Foreign Language Film.

Greek bluefin tuna tartare with persimmon, the apple of Asia. Mixed with pomegranate seeds, and finely chopped chives. Exquisite tender flesh marinated in organic fresh lemon juice and unrefined salt. So thankful to my fishermen friends from Thrace for their top-notch quality fish fillets and to Flowers Antonello for their superb lavender blossoms!
