When I first saw this strange leafy “urchin” in a public market in Constantinople, I was flabbergasted. The merchant explained to me that the “urchin” was called jasmine globe flowering tea: you buy a tiny ball made of tea leaves and, once you put it in hot water, you see a flower blossoming in your tea pot. Sheer magic.
