This spring, I decided to make a Cointreau-type of liqueur with organic oranges. Τhis was a first one for me. Important detail: during the maturation period, the oranges should be hung by strings attached on the cover of a plastic container, so as not to touch the alcohol on the bottom of the jar. The whole process needs patience, calmness, and love. “You have to give time to time”, a wise man once said.

Music Pairing
Music pairing: Joseph Haydn, Symphony No. 101 in D major “The clock” (Hob I:101).
 			Music Bites
The Symphony No. 101 is widely known as “The Clock” because of the “ticking” rhythm throughout the second movement. It was written by Joseph Haydn (1732-1809), a wonderful, inexhaustible and sublime composer of the classical era, who is familiarly known as the “father of the symphony” (he composed more than 100!).
