Pumpkin Pie With Kumquat and Raisins

For this creation, I chose “Julia’s Theme” from the film "Julie & Julia", composed by Alexandre Desplat (b. 1961). Its gentle piano melody carries warmth and balance — much like the harmony of pumpkin, kumquat and spice. The music moves with quiet grace, echoing the rhythm of hand-rolled fyllo and the calm of a kitchen filled with seasonal scents — a moment where Greek simplicity meets lyrical refinement, guided by Desplat’s elegance, precision, and unmistakable cinematic emotional depth.

An Open Pie for an Open Heart Autumn invites us to slow down and enjoy the comfort of seasonal flavours. This open pie brings together pumpkin and kumquat pulp, with raisins, walnuts, clove and cinnamon — a gentle balance of sweetness and spice. The filling rests on home-made fyllo, brushed with olive oil. Making fyllo by hand is one of my favourite rituals — calm, focused, and full of intention, much like preparing a piece of music. The result is a fragrant, golden pie that feels both simple and elegant. Perfect for sharing, tasting, and listening.
